I’ve only just received my copy of Maggie Hamilton’s new book Secret Girls’ Business, and it is just the most gorgeous thing. If you have girls aged 8-15 in your life then this is a book you really must get them. It is filled with activities, fashion tips, interviews with inspirational women and all kinds of ideas about how to be a fun and interesting person without having to spend a fortune. I am going to use many of the ideas in it to keep my adorable niece entertained in the coming years. And most relevant to noodlies food blog, it has some fantastic, easy-to-make recipes inside it and I just had to give them a try.

My first choice was the lemon delicious pudding, which I whipped up in an afternoon and which we then ate while watching some trashy TV. It seems to be pretty much a foolproof recipe, and perfect for the younger cook. You can also cook it up in vintage tea cups, if you want, to make it even cuter and more retro. I used some funky, cheap rice bowls for mine.

So here it is:

Lemon Delicious Dessert (From Maggie Hamilton’s Secret Girls’ Business)

While it’s baking, this magical dessert separates to become a sweet fluffy topping with a lovely lemony sauce underneath.

Ingredients
1.5 tblspns lemon zest
3 tblspns lemon juice
1 cup sugar
3 tblspns plain flour
3 eggs
1 cup milk
1.5 tablspns butter, melted

Preheat the oven to 180 degrees Celsius. Grease 4 ramekins.
Place the lemon zest, sugar and juice in a bowl. Stir to combine. Add the flour and mix well.
Separate the eggs. Beat the egg yolks and add to the lemon mixture.
Pour in the milk and stir to combine. Add the melted butter and stir to combine.
In a separate bowl, whisk the egg whites until they form stiff peaks, then gently fold the egg whites into the lemon mixture.
Divide the mixture between the ramekins, then place the ramekins in a baking dish. Pour enough boiling water into the dish to go halfway up the ramekins. Carefully place in oven.
Bake for half an hour, or until golden.
Test the puddings by inserting a sharp knife into the centre. If the knife comes out clean the puddings are cooked.
