Vegetarian pho is also a popular variation of pho, obviously for monastics and devotees, as well as those who observe ram, the full moon cycles. In the west, vegerarian pho is popular amongst those looking for a healthy alternative.
We had this pho at Thien Truc Vegetarian House for lunch. Here, there’s no attempt to make it look or taste like meat; which other places attempt. The result is is a clean, guilt-free and tasty pho. The mushroom and tofu pieces provides a good lift.
Vegetarian pho is just as authentic as any other form in my books!

Hi Dolly, my favourite veg is Duy Linh in Hill street near Pho An.. it is very good vegetarian… although they do have a tendency to make it taste and look like meat, which may not be appealing to some.. but because I'm a meat eater, it's yum+!
Their bun canh chua is to die for.
Have been to Colour of Love.. not bad, but I think there's a few places in Cabra run by the same group so the food can be similar-ish

PS Dolly, the pho thing I"m doing will be in the coming Wed's Fairfield Advance and other local paper in the Cumberland news group.. so hopefully you'll see it, but if not, I'll be all over noodlies.. there may also be posters about it around the Pho restaurants from the weekend.. can't say anymore than that.. it's all hush, hush for now… but I'm v excited!
